Can someone point me in the direction to some tips and tricks using WM2003 SE. I'm new to windows mobile and not sure where to start. For example: 1 - is there a way to sync via IR with one touch as opposed to going into active sync -> tools -> IR connection? and when done having to touch stop? 2 - is there a way to switch the screen mode without going into the settings screen?
Stuff like that. Thanks

Can't find a step-by-step guide for the Second Edition, but we have some SE's new items listed in our SE device reviews like this one:

You can explore the new features and see if it will help master them.

There isn't a one-touch ActiveSync solution for IR or any other form of wireless syncing. Only cradle/cabled syncing is less than no-touch, it's "no touch" .
Changing screen orientation varies by brand. HP's rz1715 has a hardware button to change orientation and the Dells have a little icon in the taskbar to do this without having to go into display settings.

I have the Dell Axim 30 middle version. I can't seem to find the icon on the task bar to switch orientation. Is it a setting that makes the icon appear or am I just blind to it?

Not sure if everyone knows this or not, but if you want you can change any of the hardware buttons to <rotate screen> so it's one touch. On the Dell, I don't use the voice memo so I changed that to change screen orientation, and it works great. Just an FYI
