Can anyone tell me how the phone book is set up in the LG Lotus? Is each phone number a separate entry regardless of who it belongs to, or is there one entry per person with the person's different numbers displayed underneath once you select the name? In other words, is it efficient and easy to use?

Actually, Tong Zhang wrote our Lotus review, but I can tell you that the Lotus, like pretty much all recent mobile phones, supports multiple phone numbers per contact, along with 1 or more email addresses. So yes, the address book lists a person's name with their phone numbers underneath.
