The Pocket PC doesn't treat MMC and SD cards any differently in terms of file structure and directories.
I'd imagine it should work, unless the particular brand or model of MP3 player had unusual file system requirements. So far the ones I've used are happy as long as you put the MP3's in the folder they designate.
